Pineapple Kesari

Ingredients
  1. Pineapple - 1 cup roughly chopped
  2. Rava/Semolina - 1.5 cup
  3. Sugar - 3/4 cup
  4. Ghee - 1/2 cup 
  5. Cardamom powder - 1/2 tsp
  6. Saffron strands - 3 or 4
  7. Water - 3 cups
  8. Raisins - 2 tbsp
  9. Cashew nuts - 2 tbsp

Method
  • Heat about 2 tbsp of ghee in a pan and fry the cashew nuts until color begins to change. Drain on kitchen towel
  • In the same ghee fry the raisins until they puff up. Drain and set aside.
  • Add another tablespoon of ghee and fry the pineapple. Keep it covered and let it cook for about 5 minutes.
  • Remove the pineapples and add 2 more tables spoon of ghee and add the semolina. Cook the semolina until roasted and fragrant.
  • Meanwhile heat water in a saucepan along with saffron strands.
  • Add the semolina to the boiling water and keep mixing to avoid lump formation. Once it is mixed well, add sugar and mix until combined well. Continue on low flame.
  • Finally add pineapple, remaining ghee and cardamom powder. Continue mixing until the kesari comes together.
  • Turn off the flame and garnish with raisins and cashew nuts.

Kundapura Chicken Curry/ Kundapura Koli Saaru

Kundapura Chicken Curry is a traditional chicken preparation popular along the coastal belt of Mangalore - Udupi - Kundapura region. It is an excellent accompaniment for kori rotti, sanna , neeru dosa and rice as well. So that is another jog down the memory lane. Rava Uthappam

Quite a few friends have requested for some vegetarian recipes to be posted in my blog else they say they would  " unlike" the page on facebook :) I have been trying to recollect the vegan recipe that I love the most and that is when Rava Uthappam clicked! A quick uthappam recipe that does not require the batter to stand over night. So here goes the history. This recipe dates to those days when I had just moved out of college into corporate life. A few of us classmates moved in together after college beginning to bask in the glory of the newly found financial independence.
